Panzanella is a salad from Tuscany made with stale bread and tomatoes, onions and fresh herbs. Other regional vegetables can also be added. It is a great dish to reuse stale bread. The bread absorbs the aromas of the dressing and vegetable juices and is naturally soft as a result.

You can also make the delicious tomato salad without bread and then simply pour it onto a slice of bread. Very delicious! Especially if you toast the bread beforehand.

Ingredients for the salad for 4 persons

  • 4 slices of bread according to your taste, toasted
  • 4 fresh tomatoes, diced
  • 1 green hot pepper, sliced
  • 1 onion, finely diced
  • 1 clove of garlic, pressed or very finely diced
  • fresh herbs, for example basil, rosemary tips & thyme leaves
  • black pepper as needed
  • 1/2 teaspoon salt
  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar or balsamic vinegar

Let the salad stand at room temperature for about 25 minutes after you have mixed all the ingredients well. Tomatoes taste best at room temperature because they can then develop their aroma better. It's a little bit like Bruchetta, right? Exept one ingredient ... the vinegar ;)

However, so that lycopene can fully develop its effect, the tomatoes should be heated.
